The Country Road Blossoms is harvested from a bee yard facing a field of Alfalfa in dry weather conditions. The grasshoppers get the Alfalfa crop before the bees and amazingly our bees prefer to suck the nectar of the Alsike clover and Sweet clover growing in the ditch together with the Indian paintbrushes, the Vesces and other wildflowers. It has a green-yellow color as the Alsike and Sweet clover are the main components of nectar and depending of the rainfall the honey tend to crystallize faster, so keep it in the fridge and if needed, warm it up at low temperature not over 40C/104F in a double boiler where you can dip your hand to check. We have a deal with the Ag Fieldman for not spraying the ditches but cut mechanically once a year.
